Black Bean And Corn Salsa
I made one of my husband's favorite recipes this week. It's a great side dish with grilled chicken. I like to grill my corn first, but you can also use steamed corn. Here ya go!
Black Bean and Corn Salsa
Ingredients:
1 can black beans, rinsed and drained
3-4 ears of corn, lightly grilled
handful of tomatoes, coarsely chopped (I used multi-colored ones from the grocery store)
1 avocado, just barely ripe, chopped (should be pretty firm, otherwise this gets too mushy)
1 can hearts of palm, cut into chunks
handful of cilantro, coarsely chopped
lime juice
good olive oil
salt and pepper
Once the corn has cooled, slice off the kernels. Gently mix first six ingredients together. Squeeze fresh lime juice on top, and drizzle a little olive oil on top. Season with a bit of salt and pepper. Gently toss. Yum! Serve on a bed of greens, or as a side dish with grilled chicken.
Have a heart healthy day!

February is Heart Month!
Yikes! I almost missed Heart Month!
With only days to spare, here are some Tips for Heart Health from the Beth Israel Deaconess Medical Center CardioVascular Institute. Stay healthy out there!
1. Schedule a check-up...don't avoid your doctor. (Like I used to do). Ignoring your health will not prevent a heart attack.
2. Eat your fish...I eat salmon at least once a week. Omega-3 fatty acids are good for your heart.
3. Get up and move...Exercise, baby! Walk every day for a strong heart.
4. Cut down on salt... excess salt puts pressure on your blood vessels and heart. Avoid processed food and fast food. Eat fresh!
5. Avoid trans fats...That means no McDonald's french fries (*sob, sob...oh, how I miss you!*). (ETA: Evidently, McDonald's fries no longer have trans fat, but still have saturated fat...also bad. Bad fries! Bad!) Eat good fats instead--from nuts, seeds, plants and fish.
6. Cut 100 calories a day...it's an easy way to lose weight. Simple way to do that is cut out calorie-laden drinks, and just have water.
7. Quit smoking...it increases your risk for heart attack or stroke.
Most important advice for romance-lovers...take care of your heart! ♥♥♥♥♥♥♥♥♥♥
All my best,
Penelope

We Interrupt Your Regularly Scheduled Program....
Nothing like 24 hours in the emergency room getting an EKG, blood work, chest X-ray, more EKGs, and a stress test to bring home the true meaning of Christmas.....
Cocktails.
☺Just kidding. Due to ill effects of a new med (which I figured out 24 hours later), I experienced chest pain on Thursday night, went to the ER, got a whole bunch of stuff done, and ended up not leaving the damned hospital until almost 24 hours later. The good news: I'm fit as a fiddle, and my heart is doing great. No blood clots. Everything is A-OK. The bad news: I was in the ER for 24 freakin' hours. Cripes.
(Just as an aside, I find it extremely irritating that you cannot wear a bra while doing the stress-test. Jogging on a treadmill without a brassiere is a super bad idea).
So, I'll be taking it easy this weekend and enjoying time w/ the family. My son brought me a gorgeous bouquet of flowers in the hospital, and my daughter refused to sit down because it was a "germ-fest in here."
This week I'm shopping for the kids and my hubby, which I love to do. And planning a Christmas dinner. My husband is making his famous beef tenderloin with 3 sauces....white, red and green. Cute!
Happy Weekend To All,
Penelope

Penelope's I Wanna Stay Alive Diet and Exercise Plan

A lot of folks have been asking me how I lost 48 pounds. Honestly, the threat of impending death is a super great motivator. It makes you go for a walk in the pitch dark and freezing cold when you'd rather be home in bed watching TV. It prevents you from eating a brownie with your kids (just picture a skull and crossbones on top of the brownie pan). Having a heart attack at 44 was a wake-up call like no other. The fear of death jump started my diet. But common sense is keeping it going.
Today, I'm going to talk about my exercise plan. Tomorrow, my diet.
All right...here it goes...(drum roll please)...
I walk.
That's it. I walk.
I don't do any fancy-pants machines at the gym. I don't take hot yoga or spinning class or karate or high-impact aerobics.
I just walk around the block.
I don't walk with weights or a pedometer, or fancy lycra pants, or sporty pull-over jackets. I wear a t-shirt and black pants, and in the winter I wear lots of layers, a dorky hat, scarves and my sneakers.
I know. This is boring. It's not glamorous, or sexy, or exciting. But frankly, I don't give a rat's ass, because it works.
Walking is free. All I need is a pair of sneakers and I'm all set. I get fresh air, I can listen to my music if I so desire, I say hi to my neighbors. Sometimes I see cool birds. If it rains, I wear a rain coat. If it snows, I wear a parka.
Walking is easy, low impact, and works like a freakin' charm for weight loss. I lost almost 50 pounds just by walking around my neighborhood.
I walk for 30-45 minutes in the morning. I take another walk at lunchtime...maybe a quickie 15 minute walk, maybe longer if I have time. Then, I take another walk later in the afternoon...sometimes walk the dog, or walk with the fam (son on his skate board, daughter on her scooter, hubby hanging out with me). If I can hack it, I squeeze in one more quickie 15-min. walk at 7 pm before I wind down for the night.
The way I see it, my sedentary life needs to be offset by moving. So if I spend time writing or reading, then I need to compensate by doing something. It could be going grocery shopping, walking into town to mail a letter, pulling weeds in the garden, whatever.
There are 2 states of being. Moving. And Not Moving.
Moving=working out my heart, burning calories, toning my body, producing endorphins, making my head clear and focused, all good things.
Not Moving=sedentary lifestyle=bad, bad things. Death and Destruction. The Apocalypse. Diabetes. Heart Disease. Big, fat ass. You get the idea.
The hidden benefits of all this exercise...1) my skin looks really good, 2) I never get sick, and 3) I have fantastic brain-storming sessions where I work out all the kinks in my WIP, including pages of dialogue.
So, that's it. I try to move around a lot, burn calories, keep my heart rate up. So far, so good. The diabetes is gone, my heart has healed, my blood pressure is great, my cholesterol is excellent. I'm on the right path.
What are you guys doing for exercise? Any cool suggestions? Things you love to do? Let me know!
Tomorrow...Part 2 of Penelope's I Wanna Stay Alive Plan: The Diet.

Is Your Heart Trying To Tell You Something?

email title: This Is A Hot Flash?...sent to some friends on August 2, 2010
"Chest pain, head about to explode, heat and pain radiating down my arms, hands get numb, heat moves over my neck to my jaw, face turns red, dizziness, incredible heat/pressure/pain for 15 minutes until I think I'm gonna die. Holy Mother. I thought hot flashes meant you got sort of hot and sweaty for a couple of minutes. This SUCKS! I get a small one, then it goes away, then another one that's stronger, then it goes away, and they keep building up until I am totally incapacitated and lying on the floor."
One of my goals for the year is to spread the word about heart health. I'll be including healthy recipe ideas on my blog, and also information about recognizing the symptoms of heart failure, tips on reducing heart disease, etc. The message above is an actual email I sent to some friends in August of this year. I mistook my symptoms for early menopause. But it was NOT a hot flash. On August 3, 2010 I had a massive heart attack and was rushed to Beth Israel Hospital in Boston. I had been experiencing these symptoms for 2 weeks and brushed them off.
Unfortunately, many women experiencing chest pain do not realize what's happening to them. They attribute the pain to stress, indigestion, hormonal changes. Heart disease is the #1 killer of women in the U.S. But women are much more likely than men to put off seeing their doctor or to seek emergency treatment. Getting treatment quickly is absolutely critical!
Women's symptoms also vary greatly, which is another reason for misdiagnosis. Here is a list of possible symptoms...(from Women's Heart Foundation)
- pain, pressure, fullness, discomfort or squeezing in the center of the chest
- shortness of breath
- stabbing chest pain
- radiating pain to shoulders, neck, back, arm or jaw
- heart palpitations
- upper abdominal pain
- nausea, vomiting, severe indigestion
- sweating
- dizziness, weakness
- sudden extreme fatigue
- panic with feeling of impending doom
I had a hard time articulating my symptoms at first. But I knew something was terribly wrong. I just kept explaining it away.
If you, or any of your friends, family, or acquaintances are experiencing confusing symptoms, please follow up immediately with a doctor. (My doctor appointment was for August 4...I didn't quite make it!)
Women have a tendency to take care of everyone and everything else before themselves. And to ignore their own health. There are no more excuses for me. Taking care of my health comes first every day...taking my meds, going for walks, following a strict heart-healthy diet. I've lost 45 pounds, and my heart has already recovered. I feel incredibly fortunate and blessed.
I am so excited for Thanksgiving this year. All of my family will be here celebrating. I have a lot to be thankful for...great medical care in Boston, amazing support from family and friends, and a second chance. My Thanksgiving dinner will be a big-ass salad (with a little bit of turkey on top!). Nothing tastes as good as being alive!
Hoping for Good Heart Health for Everyone,
Penelope
